MIKRO, a small-batch coffee roastery based in Hermanus, was established by culinary talents, Wihan and Lise Brink, in 2018. These qualified chefs channelled their expertise into the art of roasting, tasting, and blending coffee sourced globally, all with the aim of producing something that’s more than the sum of its parts. Every step is a manual labour of love, with small batches meticulously created by hand to ensure quality and consistency.Â
What started as a dream in their kitchen, evolved into a coffee counter at Hermanuspietersfontein Winery. In just under a year, their collection of sample roasters grew into a 5kg roaster and in October 2021, they took the leap and opened their dream roastery-café in the heart of Hermanus, a place where they connect with the local coffee community through tastings and events.
When MIKRO was just a few months old, Lise Brink stepped into the role of master roaster. Drawing on her culinary background, she skillfully crafted flavour profiles for each coffee origin. Her hands-on dedication adds a personal touch to each roast, and she revels in observing how individuals connect with the realm of specialty coffee through her meticulously crafted roasts.
